Happy March 1st! We should be nearing the beginning of spring, right? I don’t know about wherever you are, but it’s still -15 C here. Sure doesn’t feel like the spring I’m used to. I never make oatmeal for breakfast. I’m trying to get in the habit of eating a proper breakfast these days, rather than just my usual coffee and then some more coffee. Sounds pretty basic, but I really do struggle with getting in three real meals per day. Who consumes nothing but coffee until nearly 4 or 5 pm and then ends up eating the heaviest meal of the day at nearly midnight?

It’s a terrible energy-sucking habit that has to stop. This week I’ve been “super good“. I’d usually just poach a couple of eggs with toast and tomato or eat raisin bran, but today I put in a little extra effort. It still only took 5 mins to prepare. No excuses, really. This one will stick to your ribs for the first half of the day so you won’t be lacking energy and you won’t feel the urge to… ahem… grab a cookie off that rack when you get to work?

Dessert for Breakfast: serves 2
2/3 cup quick oats
1+1/2 cup water
pinch salt
2-3 TB raisins
1/2 Granny or Crispin apple, diced
pinch cinnamon
1 TB brown sugar, packed
drizzle honey
milk to finish, if you wish
-Bring the water and salt to a boil.
-Add the oats, cinnamon, and raisins, stir, reduce heat to low.
-Continue stirring periodically, and simmer for about 3-5 mins, until thickened.
-Stir in the apples, remove from the heat.
-Spoon into 2 bowls, add a little milk if you like, drizzle some honey, sprinkle the brown sugar over, and enjoy!
This is perfect for breakfast. Plus you’ve just reminded me that I haven’t made something like this in ages! Maybe for tomorrow morning..

Just bought some steel cut oats yesterday and am ready to get back on the healthy oatmeal breakfast regime again…bye, bye French croissants and pain au chocolat (for now).

I often eat oat porridge for breakfast, which I really love. Oat is definetly a good start of the day!
