Raspberry Apple Breakfast Bread: yields 1 loaf


1+1/2 cup              all purpose flour

1/2 cup                  whole wheat flour

1/2 tsp                   salt

1+1/2 tsp               baking powder

1/2 tsp                   baking soda

pinch                     cinnamon

pinch                     ground cloves

pinch                     ground ginger

2                            eggs

1/2 cup                  canola oil, or melted coconut oil

1/2 cup                  milk, or almond or soy milk

1/3 cup                  brown sugar

1/3 cup                  granulated sugar

1/2 cup                  berries of your choice

1/2 cup                  diced apple

granulated sugar for top



-Preheat oven to 360 F, and prepare a loaf pan with non stick spray or line with parchment paper.

-In a large bowl whisk together the flours, soda, powder, salt, and spices, then stir in the fruit and incorporate thoroughly.

-Whisk together the eggs, oil, milk, and sugars until smooth.

-Pour the wet ingredients into the dry ingredients and fold together using a spatula until just combined. Do not overmix, just stir until there are no lumps of dry ingredients.

-Spoon the batter into your prepared loaf pan, sprinkle the top generously with granulated sugar, and bake for 45 minutes rotating the pan once during baking.

-Remove from the oven, cool 5-10 mins, then remove from the loaf pan and cool on a wire rack for an additional 20 minutes.
