Apple Pie Scones: yields 1 dozen small pcs
2 cups all purpose flour
3 1/2 tsp baking powder
1/2 tsp cinnamon
3/4 tsp salt
1/3 cup sugar
6 TB/90 ml cold butter, diced
1/4 cup milk
1/2 cup yogurt
1 egg
1/2 large apple, diced small
-Preheat your oven to 400 F.
-Whisk together the dry ingredients to incorporate, then paddle the butter into the dry ingredients with a stand mixer until they resemble small peas.
-Add the apples and mix until coated and well dispersed, then add all of the wet ingredients at once and mix until just combined.
-Roll the dough out onto a well floured surface and push any loose pieces together into a large mass with your hands.
-Press the dough down gently and begin rolling it out until it’s approximately 3/4 inch thick.
-Cut the scones into desired shapes and sizes, brush with a little cream, melted butter, or egg wash, and bake until golden.
-Cool on a wire rack until room temperature, and enjoy!
*** If you like a little icing to jazz them up.. whisk together icing sugar with a small splash of water and a squeeze of lemon juice until smooth. You can add 1 TB of water at a time until you get the consistency you prefer!
I’m almost terrified to try making these because if I enjoy them as much as I know I will, I will not be able to stop myself! haha

Hi, yes it’s a simple icing made by just mixing icing sugar with water until the desired consistency is reached. I also add a small splash of lemon juice to offset the sweetness. I will add that to my post… thank you!
